For more than 26 years, my cheeses have found their way into some of the most respected kitchens in the world. What began with a single tasting has grown into lasting relationships with extraordinary chefs — Thomas Keller, Daniel Humm, Daniel Patterson, Corey Lee, and many others who have shaped modern American cuisine.

The French Laundry was among my very first customers. From that very first delivery, my cheeses became part of their daily service — woven into dishes that have inspired generations of cooks. At Chez Panisse Café, my fresh goat cheese is featured in their legendary salad. Pianoforte was a favorite of the late Chef Paul Bocuse — a quiet honor I will always cherish.

The Chef's Choice Box is a reflection of those years in the kitchen — cheeses selected not only for their flavor, but for their versatility, balance, and integrity. These are the cheeses chefs reach for: expressive yet refined, crafted to elevate a dish while standing beautifully on their own.

This collection brings together soft and aged selections, primarily goat's milk with thoughtful touches of cow's milk, offering a full range of texture — from delicate and creamy to firm and complex.

Shelf Life & Storage

Our cheeses are alive and continue to ripen, evolving in flavor and texture over time. Because of this natural process, exact shelf life cannot be guaranteed. For the best experience:

· Enjoy soft cheeses within 2 weeks.

· Enjoy hard cheeses within 4 weeks.

Keep refrigerated. Before serving, remove the cheeses from the refrigerator and allow them to rest at room temperature, unwrapped, so they can fully express their aroma and texture.

Soft cheeses need to breathe. It is natural for the surface to appear slightly moist when unwrapped. If excessive moisture is present, gently pat dry with a paper towel and allow the cheese to air briefly before serving.
